So we present an excellent lemon-flavoured muffin garnished with poppy seeds: it is a recipe that is definitely closer to those who are used to the diet of Northern Europe or America, but their lively taste is a perfect way to finish a lunch or dinner. Don’t worry: everyone will really like your muffins with lemon and poppy seeds, especially children and those who are normally fussy eaters!
Beat the eggs in a bowl with the sugar until frothy. Stir in the flour and oil and then add the baking powder, baking soda, ground almonds, juice and grated zest of a lemon and poppy seeds, mixing well. Pour the mixture into paper cups, decorate the surface with some poppy seeds and bake in a preheated oven at 180 °C for about 25 minutes.
