Place another plate on top of the slices and weigh it down with a heavy weight: at least 2 kilograms. Throughout the morning, the eggplants will lose their bitterness along with their juice. After two hours, they will also be seasoned with salt and can be dried on straw paper before being cut into cubes of one centimeter on each side. While frying the eggplant cubes in olive oil in a black iron skillet, stirring them continuously to brown all sides, cook the pasta very al dente in salted water, drain it, and leave it in the colander. Once the pasta is ready, remove the eggplant cubes from the skillet using a slotted spatula and let them rest on straw paper to lose the oil they are soaked in. In the same skillet, in the oil from frying the eggplants, sauté the pasta for a few minutes to transform it from "very al dente" to "al dente," allowing it to absorb flavor. Finally, pour the fried eggplant cubes over the pasta and mix thoroughly over low heat for a few minutes.
