The autumn season, with its warm and enveloping colors, is the perfect time to prepare Pumpkin Ravioli with Sage, a dish that sublimely embodies Italian culinary tradition. The sweetness of the pumpkin, roasted to enhance its flavor, pairs perfectly with the savoriness of the amaretti and the aromatic scent of sage. The texture of the ravioli, delicate and filled, contrasts with the softness of the filling, creating a balance of flavors that delights even the most discerning palates. This dish, typical of Emilia-Romagna cuisine, is an example of how simple ingredients can transform into an extraordinary culinary experience. The pumpkin, in particular, is the star of many autumn recipes, but here it is elevated to new heights with the addition of mustard and parmesan, which give a note of complexity to the filling. The baking technique not only allows for a dry and flavorful pulp but also enhances the aromas, making the filling perfect for being enclosed in a thin sheet of pasta. Pumpkin Ravioli with Sage are suitable for many occasions: they are ideal for a family Sunday lunch but can also represent a refined dish to serve during a dinner with friends. A touch of melted butter and a few crispy sage leaves complete the dish, making it even more inviting. In some regional variations, you may find the addition of walnuts or a hint of tomato sauce, but the traditional recipe remains a celebration of pumpkin, a symbol of abundance and the season. Preparing them means bringing to the table not just a dish, but a piece of culinary history, perfect for warming up autumn evenings.

Clean the pumpkin, cut it into large pieces, and bake it in the oven at 200 degrees Celsius for about 20 minutes. Pass the pulp through a sieve or blend it. Make sure it is well dried. Add the finely crumbled amaretti, 150 g of parmesan, finely chopped mustard, a pinch of salt, and pepper. Mix the ingredients well using a fork: you should obtain a fairly dry mixture; if not, add more parmesan or amaretti. Let the mixture rest in the refrigerator overnight. Roll out the dough thinly and distribute small mounds of filling on half of it, spaced 4-5 centimeters apart, then cover with the other half of the dough and cut out the ravioli with a special wheel. Boil the ravioli in salted boiling water, then drain them. Melt the butter with the sage, and when it is golden brown, dress the ravioli with it and sprinkle with the remaining parmesan. Arrange the ravioli on a previously heated serving plate and, if desired, garnish with star shapes cut from the pumpkin pulp.
