On a rainy afternoon in Liguria, when the air is filled with sweet and enveloping aromas, the Genoese Cake presents itself as a sweet cuddle for the palate and the soul. This delightful dessert, typical of Ligurian tradition, is made with simple yet high-quality ingredients, such as fresh eggs, sugar, and flour, which come together in a light and fluffy batter. Its texture is airy, with a delicacy that melts in your mouth, while the sweet and vanilla flavor is enriched with notes of nougat and almonds, creating a perfect balance between sweetness and aromaticity. Originating from Liguria, the Genoese Cake has roots in the pastry tradition of this region, where the cult of good food is an integral part of local culture. Variants of this cake may include the addition of rum, which gives it an intriguing and enveloping aftertaste, making it ideal for special occasions. Traditionally served during holidays, this dessert is also perfect for a family lunch or a snack with friends, accompanied by a good coffee or aromatic tea. The preparation requires careful technique: whipping the egg whites to stiff peaks is essential to achieve the lightness that characterizes the cake, while the melted butter, although not hot, adds an unmistakable softness to the batter. Once baked, the Genoese Cake should cool in the turned-off oven, a step that helps stabilize its structure and further enhance the flavors. With its simplicity and charm, this dessert is capable of winning the hearts of anyone who approaches Ligurian culinary tradition.

Preparation

Prepare the batter by working the egg yolks with the sugar and incorporating, in order: the whipped egg whites, the flour, the melted butter (not hot), and a pinch of salt. Pour the (homogeneous) mixture into a buttered cake pan of about 24 cm in diameter and place it in a preheated oven at 190 degrees for about twenty minutes. Then let the cake cool in the turned-off oven; after that, place it on a serving plate and cut it in half horizontally. Pour over the bottom layer, slightly moistened with rum and water, a cream made by thickening milk, the egg yolks worked into a cream with sugar, flour, and vanilla, to which, once ready, finely chopped nougat is also added. Place the second layer of sponge cake on top of the cream and sprinkle it with rum diluted with water. Spread a thick glaze of whipped egg whites and powdered sugar over the outer surface of the cake; then sprinkle with toasted, peeled, and sliced almonds. Keep the cake cool. For birthday celebrations, place a few candles in the center of the cake.

Tips
To achieve a fluffy Genoese cake, make sure to whip the egg whites until stiff peaks form, gently folding them into the batter to maintain the lightness and softness of the cake.
