Preparation

First make the caramelized onions: cut the onion into thin slices, then let it caramelize in a frying pan with a little oil, brown sugar, salt and a few drops of water. For the mini flans: blend the milk, eggs, flour and salt with an electric blender, then add the mushrooms and blend again. Pour the mixture into the individual ramekins. Put the flans in the oven with a little water in the bottom of the baking tray and bake for 45 minutes at 160°C. Serve the flan with a little olive pâté on top and the caramelized onions.
