In the crisp air of a market day, Puglian Taralli stand out for their crunchiness and the enveloping aroma of fennel seeds, telling the story of the culinary tradition of a region rich in history and authentic flavors. These small rings, with a soft heart and a golden surface, are the result of a preparation that skillfully combines "00" flour, brewer's yeast, white wine, and oil, creating a texture that invites enjoyment on every occasion. Originating from Puglia, taralli are not just a snack to nibble on, but a true symbol of conviviality, perfect for an outdoor lunch or to accompany an aperitif among friends. Their preparation requires a particular technique: after kneading the ingredients, the taralli are boiled in water until they rise to the surface, a step that ensures unmatched crunchiness once baked. In Puglia, every family has its own recipe, often enriched with local ingredients like onions, garlic, and oregano, making every bite a unique experience. These little rings are ideal for serving during holidays or as a nibble during an informal dinner, paired with a good local wine. With their rustic flavor and versatility, Puglian Taralli are the perfect example of how the simplicity of ingredients can give rise to an extraordinary product, capable of awakening the senses and bringing a piece of Puglia to the table.
* approximate values per serving
All the ingredients are kneaded to form a ball, left to rest for 1/2 hour, and then you start to make the tarallini (the size is up to you). Let them rise for 20 minutes and place them in boiling water until they float to the surface, then drain them and place them on a greased baking tray and bake them (in a preheated oven) at 180 degrees for about 25 minutes.
