Preparation

Wash the sea bream, dry it, make small cuts in the thicker parts of the flesh, and insert a stick of lard and a piece of anchovy. Brush a sheet of aluminum foil with oil, place the fish on it, and seal the parcel. Cook in a preheated oven at 180 degrees Celsius for half an hour without opening the parcel. At the end of cooking, remove the fish from the wrapping, pour the sauce that has formed into a small pan: dilute it with white wine and, over high heat, reduce it by at least one third. Remove from heat, and incorporate the butter in pieces. Place the fish on a serving platter and serve with the sauce on the side. Recommended wines: Oltrepò Pavese Riesling Italico DOC, Verdicchio Dei Castelli Di Jesi DOC, Bianco D'Alcamo DOC.
