⏱ 80 min👤 4 pp★★☆☆☆

The Amaretto Cake presents itself as a warm dessert, where the sweetness of almonds and the fragrance of amaretti blend into a perfect balance. This dessert, with its soft and moist texture, is characterized by an intense and aromatic flavor that immediately evokes the idea of an afternoon snack or an after-dinner treat with friends. The preparation of this cake requires careful attention, particularly in the phase of whipping the eggs with sugar and honey, a technique that allows air to be incorporated into the mixture, ensuring optimal rising and a light texture. The choice of liqueur, often an amaretto or almond liqueur, further enriches the dish, making it perfect for those who love bold flavors. Although it does not have a specific regional origin, it is a dessert that is well-suited to be served on various occasions: from Sunday lunch to a dinner among friends, and even as a festive dessert. The base of puff pastry, which envelops the filling, offers a crunchiness that pleasantly contrasts with the softness of the pastry cream and the crumbled amaretti. There are local variations that may include the addition of dried fruit or spices, making each preparation unique and personal. Served with a dusting of powdered sugar, the Amaretto Cake becomes an elegant and refined dessert, perfect for beautifully concluding a meal or for a sweet break during the day.

Preparation

Roll out the pastry into a square shape and line a round cake pan, allowing the corners of the dough to hang over the edges. Beat the sugar and honey with the whole eggs and add the egg yolks one at a time. Sift the potato starch with the flour, baking powder, and almond flour, and when the egg mixture is whipped, incorporate the liqueur, the flours, and the melted butter. Spread the bottom of the cake pan with pastry cream, sprinkle half of the crumbled amaretti on top, fill with the prepared batter, and finish with the crumbled amaretti. Fold the four edges of the pastry without sealing them, dust with powdered sugar, and bake at 180 degrees Celsius for 45 minutes. When cooked, the center should not sink.

Tips
If you want to achieve perfect crispiness for the amaretto cake, make sure not to overload the surface with crushed amaretti, so they can caramelize well during baking.
Trivia
Amaretto is an Italian liqueur made from almonds that has its origins in the 16th century. The word 'amaretto' comes from the Italian 'amaro', highlighting its sweet flavor but with a slight bitter note.
