Preparation

Make a dough by kneading, with a little warm water, 50 g of flour and the cube of yeast, cover and let it rise. Meanwhile, in a bowl, knead flour, sugar, Parmesan cheese, and salt with the eggs and butter, working for a long time, gradually adding the milk until the dough is soft but firm, and finally, the yeast dough that has doubled in volume. Work vigorously until the dough comes away in one piece from the bowl, shape it into a ball, mark a cross, cover, and let it rise. After about an hour, knead again and roll out the dough into a wide strip on which to distribute the filling of diced cured meats and cheese; roll the dough tightly around the filling and place it in a buttered and floured crown mold. Cover with a cloth and let it rise in a sheltered place until the brioche reaches the edge of the mold. Bake at moderate heat (170° C) for 25-30 minutes until it turns a dark blonde color. Unmold onto a serving plate and fill the central cavity with sautéed peas in butter and ham, or with eggplant and mushrooms or another filling.
