Feijoada is a rich and hearty dish, perfect for winter days when the desire for comfort food intensifies. This stew of black beans, pork, and sausages stands out for its thick consistency and deep flavor, which is released during the long cooking process. The preparation begins with soaking the beans, a crucial step that allows for even cooking and a creamy final result, while the meats, including ribs and bacon, impart a smoky and rich flavor. Originating from Brazil, feijoada reflects the fusion of cultures and ingredients typical of carioca cuisine and is often served as a main dish during celebrations and family lunches. Although versions may vary from region to region, the base of beans and meat remains unchanged, with some variations including the addition of local spices or different types of meat. This dish is ideal for a festive table on special occasions, such as holidays or a Sunday lunch, where it can be accompanied by white rice, farofa, and a fresh tomato sauce. The addition of lemon and chili, finally, gives a touch of freshness and liveliness, completing a dish that is already a celebration of flavors and traditions.

Soak the black beans overnight in a container with plenty of water and a bay leaf. Use the same method for the pieces of pork. Then boil them for half an hour to soften and remove some fat. Once drained, place them in a tall pot along with the beans and the sausage cut into pieces. Cover with water, add salt, and simmer for two hours. In a pan, sauté oil, garlic, onion, and bacon, adding a bit of the bean broth, chopped parsley, and pour everything into the soup, stirring and allowing to simmer until the feijoada is thick and the meats are well cooked. Serve in earthenware bowls, accompanied by a raw sauce made with finely chopped onion, parsley, garlic, and tomato, oil, lemon juice, and crushed chili.
